Charlene’s Cold Blueberry Pie {Best Fruit Pie}
We’re excited to share with you some of the amazing pies entered into the 2011 pie contest. Today we’re sharing the winner of the Best Fruit Pie, Charlene’s Cold Blueberry Pie, by Megan Turcotte.
Charlene’s Cold Blueberry Pie
Megan says: This is a summer staple in John’s family; the recipe came from his mother’s college roommate, Charlene. It is so unbelievably easy to make.
1 pint blueberries, washed and dried, set aside 1 cup
1 c. water
1 c. sugar
1/3 c. flour
3 Tbsp butter
1 homemade graham cracker crust (I bake mine)
Cook 1 c. blueberries in saucepan with 1 c. water just till berries split. Add sugar and flour and cook till thickened. [Flour always gets clumpy on me.] Put in blender with 3 Tbsp butter cut up and blend.
Put remaining berries in bottom of crust and pour berry mixture over. Chill at least 4 hours or overnight. Serve with whipped cream. [or not!]
